Carrot, Ginger, Lime Soup

 SERVES 4

 

INGREDIENTS:

 

1 T. olive oil

1/2 red onion, chopped

1 clove garlic, grated

2 tsp. ginger, grated

2.5 cup carrot, chopped

3 c. chicken stock

1 packet True Lime (or juice 1/2 lime)

1/4 c. Greek Yogurt

Cilantro

Salt and Pepper

 

INSTRUCTIONS:

 

1. In a large saucepan, warm oil and add onion. Cook for 4-5 minutes and add garlic and ginger.

 

2. Add carrots, chicken stock, and True Lime and bring to a boil. Allow soup to simmer partially covered until carrots are tender.

 

3. Transfer soup to a Vitamix or Blender and process until smooth. Season with salt and pepper.

 

4. Pour into serving bowls and top with 1 T. Greek yogurt and cilantro.
