Almond Chicken with Mango, Cabbage, Citrus Slaw

SERVES 4
INGREDIENTS:
Chicken:
7 Chicken tenderloins, cut in half, lengthwise
1/2 c. almond flour
salt & pepper
1/2 tsp. paprika
Slaw:
1/2 Purple cabbage, sliced
1 mango, sliced
1/2 c. fresh cilantro
2 True Lime packets
1 T. olive oil
1 T. lemon Kevita kombucha
INSTRUCTIONS:
1. Pre-heat oven to 350 degrees F.
2. Mix flour, salt, pepper, and paprika in a shallow bowl. Dredge chicken in the mixture and place on a wire rack over a cookie sheet.
3. Combine slaw ingredients in a large bowl and toss until well coated.
4. Cook the chicken in the oven for 14-16 minutes until no longer pink. Remove from oven and allow to cool.
5. Top slaw with chicken.
