2 lb. chicken breasts, cut into 1'' pieces
3 garlic cloves, minced
1/3-1/2 c. orange juice
1/2 c. Vitafiber
1 tsp. Truvia Nectar
1/4 c. Coconut Aminos
1/4 c. Rice Wine Vinegar
1 T. Arrowroot powder
1/2 tsp. ginger paste
1/2 tsp. white pepper
Zest of one orange
*Topping: green onions and sesame seeds
1. Cook chicken in a large pan over medium-high heat.
2. Whisk remaining ingredients together in a mixing bowl. When chicken is cooked and slightly browned, add sauce to the frying pan. Bring to a boil and continue to let it boil for an additional 2-4 minutes until sauce thickens.
3. Remove from heat and serve over quinoa and spinach. Top with diced green onions and sesame seeds.
