Pumpkin Pancakes


1 SERVING

INGREDIENTS:

1/2 C. Old fashioned oats

1/2 tsp. baking soda

1/2 tsp. baking powder

1 tsp. vanilla

1 tsp. cinnamon

1 tsp. pumpkin pie spice

1/4 c. pureed or canned pumpkin

3-4 egg whites

INSTRUCTIONS:

1. Blend together all ingredients.

2. Warm a pan over medium-high heat. Spray with coconut oil.

3. Ladle batter onto warm pan and cook for 1-2 minutes on each side.

ENJOY!

* I topped mine with sugar free peanut powder and maple syrup.

* These are also great if you make them ahead of time and freeze for busy mornings.
