Apricot Mint Quinoa

C INGREDIENTS:

 

1/2 c. quinoa, cooked

1 red bell pepper, chopped

2 apricots, chopped

5 mind leaves, cut into slices

salt and pepper (optional)

 

INSTRUCTIONS:

 

Combine all ingredients in a medium bowl and stir until combined. Season with salt and pepper if desired.
