Berry Oat Breakfast Cups

INGREDIENT:

 

1 c. oats

4 egg whites

1/4 c. bluberries

1/4 c. raspberries

1/4 c. strawberries

1 T. maple syrup

1 T. coconut oil

 

INSTRUCTIONS:

 

1. Pre-heat oven to 350 degrees F.

 

2. Combine oats, egg whites, coconut oil and syrup in a bowl and mix well.

 

3. Carefully combine berries into the mixture.

 

4. Pour the batter into lined muffin tins.

 

5. Cook for 15-18 minutes and allow to cool.

 

* I store these in the fridge for a quick breakfast or snack the next day. The kids also love them!
