Sweet Potato Nachos

INGREDIENTS:

 

1 sweet potato, thinly sliced

4 oz. ground chicken

Seasoning:

1 tsp. chili powder

1/2 tsp. cumin

1/8 tsp. garlic powder

salt and pepper (optional)

1 T. plain greek yogurt

1 T. salsa

1/2 avocado

1 tsp. lime juice

1 small tomato, chopped

 

INSTRUCTIONS:

 

1. Bake sweet potato "chips" until crispy

 

2. Sprinkle chicken with the seasoning and cook over medium/high heat until cooked thoroughly.

 

3. Mash avocado and stir together with lime juice.

 

4. Arrange sweet potatoes on a plate and top with yogurt, salsa, avocado, and tomato
