2 romaine lettuce heads
3-4 oz. pulled pork (I cook a huge roast in the crockpot with low sodium veggie or chicken broth. After it cools I shred it and put it in air tight freezer bags.)
1 c. carrot and purple cabbage, sliced and sautéed
¼ avocado, sliced
½ avocado, blended
1 tsp lime juice
1. Blend together ½ avocado and lime juice. Set aside
2. Top lettuce heads with pork, sautéed veggies, and sliced avocado, and avocado sauce.
