Lean Lasagna

INGREDIENTS

 

9 Tinkyada brown rice lasagna noodles

1 lb ground chicken (I grind my chicken breast with the kitchen aid attachment)

1 T. dried onion flakes

1 tsp. garlic powder

2 T. Italian seasoning

1 T. dried parsley

1 jar (23 oz.) low sugar marinara sauce

1 c. mushrooms, chopped

3-4 c. spinach, chopped

1 c. cottage cheese

1 c. low moisture, part skim, mozzarella cheese, shredded

pepper

 

INSTRUCTIONS

1.Pre heat oven to 370 degrees F

 

2. Spray 9 x 13 backing dish with non stick spray

 

3. Cook noodles until al dente. Drain, and rinse with cold water

 

4. Cook chicken, onion flakes, garlic powder, Italian seasoning, pepper, and parsley on the stove top.

 

5. When chicken is almost cooked, add marinara sauce, mushrooms, and spinach and simmer for 2-3 minutes util spinach is wilted

 

6. In the baking dish, spread 3 noodles on the bottom. Cover with 1/3 o. cottage cheese, 1/3 of meat mixture, and 1/3 of cheese

 

7. Repeat this one more time ending with cheese on top

 

8. Cover with foil and bake for 20 minutes. Remove foil and cook for an additional 5 minutes. Let cool before serving
