Quinoa Fried "Rice"

INGREDIENTS:

 

1 c. quinoa, cooked

1 tsp. olive oil

2 eggs

3 cloves garlic, minced

1 tablespoon minced ginger

1 ½ c. broccoli

1 c. peas

1/2 c. corn

2 tablespoons low sodium soy sauce

½ teaspoon Sriracha or other hot sauce (optional)

 

INTRUCTIONS:

 

1. Heat pan over medium high heat

 

2. Wisk eggs and pour into pan. Stir until cooked and in little pieces.

 

3. Transfer eggs to a bowl

 

4. Pour oil and veggies, ginger, and garlic into the pan. Cook until tender

 

5. Add eggs back to the pan and season with soy sauce
