Clean Sloppy Joes

INGREDIENTS

 

1.5 lb ground elk (or lean protein of choice)

1 (15 oz.) can of no sugar added tomato sauce

1/4-1/2 c. clean ketchup (low sugar)

2 red bell peppers, chopped

1 T. onion powder

1 T. garlic powder

 

INSTRUCTIONS

 

1. Sautee bell peppers on medium heat until softened and then transfer them to a bowl to cool.

 

2. Brown the elk on medium/high heat until fully cooked.

 

3. Add remaining ingredients, including bell peppers, and reduce heat to low.

 

4. Allow mixture to simmer for 10-15 minutes.
