Crockpot Artichoke Chicken

INGREDIENTS:

 

4 Chicken breasts, cut lengthwise

1 can (14-ounces) artichokes in water, drained and rinsed

1 cup low sodium vegetable broth

1 cup baby carrots, chopped

1 garlic clove, chopped

5 cups spinach

 

INSTRUCTIONS:

 

1. Pour all ingredeints except spinach into a crockpot.

 

2. Cook for 4-6 hours on HIGH

 

3. Pour over a bed of spinach
