1 c. Quinoa, cooked
2 c. Broccolli
1/2 c. Corn
1/2 c. Peas
5-6 Egg whites
1 T. Soy sauce
1. Cook quinoa and set aside. I like to cook mine in low sodium chicken broth.
2. Scramble egg whites until cooked thoroughly.
3. Mix all other ingredients into eggs whites.
4. Transfer mixture into a bowl and stir in soy sauce.
