Paleo Apple Crisp


4 SERVINGS

INGREDIENTS:

4 Fuji apples, cored and chopped into 1'' pieces

2 scoop Vital Proteins Collagen Peptides

1 packet True Lemon

3 T. cinnamon

1/4 tsp. nutmeg

1 c. almond meal (I used the left overs from making almond milk but you could buy your own or use almond flour)

2-3 T. coconut oil

1/2 c. pecans, toasted

1 T. vanilla

INSTRUCTIONS:

1. Preheat oven to 400 degrees. F.

2. Toss apples with true lemon, cinnamon and nutmeg and place in a 8 x 8 baking dish.

3. Melt the coconut oil and mix in the collagen peptides, almond meal, pecans, and vanilla. Sprinkle over the apples.

4. Cover with foil and bake for 20 minutes. Remove foil and bake for another 5-10 minutes.
