Crock Pot Burrito Bowl


SERVES 6

INGREDIENTS:

2 chicken breasts

1 garlic clove, minced

1 c. sweet potato, chopped

1/2 c. quinoa

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 orange bell pepper, chopped

1 can black beans

3/4 c. frozen corn

1 True Lime packet

1 c. low sodium chicken broth

1 tsp. orange ginger seasoning

avocado

INSTRUCTIONS:

1. Combine all ingredients except avocados in a large Crockpot.

2. Cook for 4-6 hours until chicken is thoroughly cooked. Using a fork, shred the chicken and cook for an additional hour.

3. Top with avocados.
