Zoodle Chicken Pad Thai


INGREDIENTS:

2 chicken breasts, grilled and seasoned with salt and pepper

5 zucchini, spiralized

1 egg + 1 egg white, scrambled

2 green onions, chopped

1/2 c. unsalted peanuts

2 T. low sodium soy sauce

1 T. rice vinegar

1/2 tsp. sriracha

1/2 tsp. paprika

1 1/2 T. lime juice

1 garlic clove, minced

1 tsp. honey (optional)

lime for garnish

INSTRUCTIONS:

1. Cook zucchini and onions in a large pan or wok over medium heat for 1-2 minutes

2. Scramble eggs in a separate pan and add to zucchini when cooked thoroughly

3. Stir together in a small bowl the soy sauce, vinegar, sriracha, paprika, lime juice, and honey.

4. Toss zoodles with the sauce and top with grilled chicken

5. Garnish with peanuts and lime wedge.
