Golden Beet and Chickpea Salad


INGREDIENTS:

3 golden beets, sliced and cut into quarters

1 can chickpeas, rinsed and drained

3 c. kale, chopped

1 T. dijon mustard

1 T. olive oil

pepper

INSTRUCTIONS:

1. Steam beets until tender

2. Combine beets, kale, and chickpeas in a bowl

3. In a small bowl, wisk together mustard, oil, and pepper

4. Stir together all ingredients.
